  • sturdy, triangular tortilla chips – you don’t want thin chips for this recipe. Make sure you find tortilla chips that can hold all of the yummy goodness you will be covering them in!
  • mild Cheddar cheese and Colby-Jack cheese – you can use any kind of cheese you like. Monterey Jack and Pepper Jack are favorites in our house as well.
  • rotisserie chicken – to make this a speedy and easy recipe. Of course, you can use leftover chicken or prepare your favorite Tex-Mex chicken for this recipe, if you prefer.
  • cilantro, sour cream, guacamole, and salsa – some of the flavor boosters for the nachos.
  • optional toppings – chopped green onion, chopped jalapenos, diced tomatoes, chopped cilantro, chopped black olives, and/or lime wedges

Serve. To serve, place dollops of sour cream and guacamole on top of the nachos and sprinkle the salsa all over the top. If desired, serve with your choice of additional toppings.
