Cosmic Cookies: Ingredients & Equipment

To make these Cosmic Brownie Cookies, you will need …

Ingredients

  • fudge brownie mix – use a homemade recipe or your favorite brand!
  • all-purpose flour, canola oil, and large eggs – to be added to your brownie mix to give them a cookie consistency.
  • semi-sweet chocolate chips and heavy cream – these two ingredients make the thick, chocolatey ganache-like chocolate frosting!
  • candy-coated chocolate chips – for topping your cookies! These colorful little morsels will remind you of the Little Debbie brownies! Since these are a spin-off of them, we’re including the fun little chips, too!

Equipment

  • measuring cups and spoons – for accurately measuring ingredients.
  • baking sheet lined with parchment paper and cooling rack – for baking and cooling the cookies.
  • medium mixing bowl, whisk, and rubber spatula – for mixing the cookies.
  • cookie scoop – to perfectly portion your cookies and to ensure they are all the same size.
  • small microwaveable bowl and whisk/spatula – for preparing the chocolate ganache.

How to make Cosmic Brownie Cookies

Prepare baking sheets. Start by lining two baking sheets with parchment paper and set them aside.

Next, prepare the cookie dough. Add the brownie mix and flour to a medium bowl. Then whisk them together to combine. Next, add the oil and eggs to the bowl and mix until the dough is thoroughly combined. The mixture will be thick.

Make the cookies. Scoop the cookie dough onto the prepared baking sheets using a large cookie scoop leaving at least 1-½ inches between each dough ball. Next, slightly flatten the cookie dough with the palm of your hand. You don’t want to flatten them completely; just take the dome off the dough ball.

Bake and cool the cookies. Bake for 10-13 minutes or until the edges of the cookies have set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to finish cooling completely.

Prepare the chocolate ganache. Add the chocolate chips and heavy cream to a small microwave-safe bowl and microwave for 60 seconds. Allow the mixture to sit for two minutes before whisking until smooth.

Frost the cookie and add chips. Frost the cookies with the ganache, then immediately sprinkle the candy-coated chocolate chips over the ganache while still wet so they stick to the cookies. Allow the ganache to set completely.

Finally, enjoy the cookies! Once the ganache has set completely, enjoy (with a glass of milk, if desired!).

How to store Cosmic Brownie Cookies?

Store them at room temperature in an airtight container in a single layer for up to two days. If you have any leftovers after two days, you will need to refrigerate them to ensure the ganache doesn’t spoil. Add a layer of parchment paper or wax paper between the layers, if you need to layer the cookies.

I can’t find candy-coated chocolate chips. Is there something else I can use?

Mini M&M candy or confetti sprinkles can be used instead. 

Can I use half-and-half in place of the heavy cream?

No. Be sure to use heavy cream in the ganache to ensure it sets. Half-and-half does not contain as much fat and will result in a soft ganache that doesn’t harden.

How long does it take to make Cosmic Brownie Cookies?

Prep time is about 10 minutes, and baking time is about 11 minutes. The cookies will need to cool completely before they can be frosted, which can take up to an hour, depending on the temperature of your house/kitchen. Once frosted, the chocolate ganache will also need to cool completely before enjoying. Although this recipe does take some time, it is mostly cooling time.

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper and set them aside.
  2. Add the brownie mix and flour to a medium bowl and whisk them together to combine. Add the oil and eggs to the bowl and mix until thoroughly combined and no dry streaks remain. The mixture will be thick.
  3. Scoop the dough onto the prepared baking sheets using a large cookie scoop leaving at least 1-½ inches between each dough ball. Slightly flatten the cookie dough with the palm of your hand. You don’t want to flatten them completely; just take the dome off the dough ball.
  4. Bake for 10-13 minutes or until the edges of the cookies have set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  5. Once the cookies have cooled, make the ganache frosting. Add the chocolate chips and heavy cream to a small microwave-safe bowl and microwave for 60 seconds. Allow the mixture to sit for two minutes before whisking until smooth.
  6. Frost the cookies with the ganache, then immediately sprinkle the candy-coated chocolate chips over the top of the ganache while it is still wet. Be sure you add the candy-coated chocolate chips while the ganache is still wet, or they won’t stick to the cookie.
  7. Allow the ganache to set before enjoying the cookies.

Notes

  • Store the cookies at room temperature in an airtight container in a single layer (or use parchment/wax paper between layers) for up to two days. If you have any leftovers after two days, you will need to refrigerate them to ensure the ganache doesn’t spoil.
  • Do not overbake the cookies! You want a nice fudgy center. Bake them only until the edges of the cookies have set. The cookies will continue to bake as they cool.
  • Adding the flour to the brownie mix helps ensure your cookies have a fudgy center and do not flatten while baking.
  • Using a cookie scoop helps to ensure your cookies are the same size and bake evenly.
  • If you cannot find candy-coated chocolate chips, mini M&Ms or confetti sprinkles can be used instead. 
  • This recipe was tested using a Duncan Hines chewy fudge brownie mix, Ghiradelli semi-sweet chocolate chips, and Wilton rainbow chip crunch sprinkles.
